麝香貓咖啡(Kopi Luwak), Kopi(印尼語,咖啡),Luwak 是印尼人指一種俗稱“麝香貓”的樹棲野生動物。麝香貓咖啡是世界上第二貴的咖啡,每磅的價格高達幾百美元,它是由麝香貓的糞便中提取出來後加工完成,麝香貓喫下成熟的咖啡果實,經過消化系統排出體外後,由於經過胃的發酵,產出的咖啡別有一番滋味,成爲國際市場上的搶手貨。
原理
麝香貓喜歡挑選咖啡樹中最成熟香甜、飽滿多汁的咖啡果實當作食物。而咖啡果實經過它的消化系統,被消化掉的只是果實外表的果肉,那堅硬無比的咖啡原豆隨後被麝香貓的消化系統原封不動地排出體外。
這樣的消化過程,讓咖啡豆產生了無與倫比的神奇變化,風味趨於獨特,味道特別香醇,豐富圓潤的香甜口感也是其他的咖啡豆所無法比擬的。這是由於麝香貓的消化系統破壞了咖啡豆中的蛋白質,讓由於蛋白質而產生的咖啡的苦味少了許多,反而增加了這種咖啡豆的圓潤口感。
因爲野生麝香貓顯然更善於挑選好的咖啡果實,從而讓這種咖啡有着卓爾不凡的特點。
咖啡來源
貓 屎咖啡,產於印尼,世界最貴咖啡的一種。印尼種植大量的咖啡作物,有種野生的叫做麝香貓的動物,雜食動物,尖尖的嘴巴,深灰色的皮毛。最喜歡的食物就是新鮮的咖啡豆,咖啡豆通過在其體內的發酵和消化,最終成爲貓的糞便排出來。糞便就是一粒粒的咖啡豆,也成爲世界上最昂貴的糞便。由於數量非常的稀少,所以價格非常的昂貴。麝香貓在中南半島,印度(東北部), 孟加拉,不丹,錫金,尼泊爾,克什米爾地區都有所分佈,但能產出貓屎咖啡的,只有蘇門答臘麝香貓即印尼麝香貓。
經過加工和烘焙,貓屎咖啡成爲奢侈的咖啡飲品,流傳到世界各地的奢侈王國。當地的咖啡農,爲了追逐高額利潤,將野生的麝香貓捉回家中飼養,以便可以產出更多的貓屎咖啡。但是,養殖麝香貓產出的貓屎咖啡,成色味道也會相應的遜色很多。即使是這樣,這種咖啡的產量仍然十分稀少,並不是所有喜歡咖啡的人可以消費的起的。
這種咖啡是來自一種叫麝香貓的動物排泄物(這種動物在印尼俗稱麝香貓),雖然來自臭臭的便便,但喝一口只覺滿口甘香,還有一陣難以形容的甘甜。這種野生麝香貓喜歡喫肥美多漿的咖啡果子,但堅硬的硬果核(生豆)無法消化,隨糞便排出,清洗乾淨之後,就成爲Kopi Luwak咖啡生豆!因此有許多人稱它爲“貓屎”咖啡。印度尼西亞人發現,經過麝香貓腸胃發酵的咖啡豆,特別濃稠香醇,於是蒐集麝香貓的排泄物,篩濾出咖啡豆,沖泡來喝,由於產量稀少,並且發酵過程獨特,風味和一般咖啡大異其趣。傳統上,咖啡果子是透過水洗或日曬處理法,除去果皮、果肉和羊皮層,最後取出咖啡豆,然而,Luwak卻是利用體 內自然發酵法,取出咖啡豆,因此有一股特殊風味。
據說早期印度尼西亞的咖啡農民視專喫成熟咖啡果實的麝香貓爲死敵,但不知在哪個時候開始有人想到在麝香貓的糞便中挑出咖啡豆來製作風味獨特的咖啡。各地咖啡專家試過都讚歎不已。從此,當地農民每到咖啡成熟季節,每天都花很多時間在森林內收集麝香貓的糞便。
發展歷程
最先把Kopi Luwak咖啡引進美國的蒙塔納斯公司(M.P. Mountanos)指出,當初聽到這種體內發酵咖啡,以爲是業界笑話,並未當真,後來在《國家地理雜誌》又看到Kopi Luwak的特別報導,纔對她產生興趣,整整花了七年工夫才找到穩定的供貨來源,開始少量引進美國。這種咖啡的風味如何?一般而言,印度尼西亞咖啡帶有泥土味和中藥味,稠度也高居各洲之冠,但是Kopi Luwak的土騷味和稠度則更強,稠度幾乎接近糖漿,香味很特殊,如果你原本就不喜歡印度尼西亞咖啡,肯定更討厭Kopi Luwak,如果你偏好陳年豆的土腥味,可能會愛上這種另類咖啡。品嚐過Kopi Luwak的專家,提出兩極化評價,有人比喻爲人間極品咖啡。雖然是極品,但肯不肯花上千元去喝一杯貓屎咖啡,就是個人喜好。
製作方法
魯瓦克咖啡豆焙制過程:
1、麝香貓愛喫咖啡樹上熟透的紅色咖啡果;
2、從貓糞中挑出未經消化的咖啡種子;
3、撥開咖啡種子的銀灰色薄膜後用水洗淨放在太陽下曬乾;
4、經翻炒製成魯瓦克咖啡豆。
製作技巧
1、印尼人去除咖啡豆外表銀灰色的薄膜後,用水洗淨,放在太陽下曬乾後,再加以翻炒,便成了貓屎咖啡豆。
2、一斤麝香貓排泄物中只能提取出約150克咖啡豆,在烘焙過程中還會造成20%的損耗,由於原材料和製作工藝都十分獨特,這種咖啡可以說十分稀有,每年供應全球的咖啡豆最多也不會超過400公斤。
3、傳統上咖啡果子是透過水洗或日曬處理法,除去果皮、果肉和羊皮層,最後取出咖啡豆,然而,Luwak卻是利用體內自然發酵法,取出咖啡豆,因此有一股特殊風味。
